Pork Tenderloin w/ Blackberry Sauce

  • 1 pork tenderloin (approx. 1 lb)
  • 2 tsp Dijon mustard
  • 2 Tbsp extra virgin olive oil
  • 4 tsp sea salt
  • 2 Tbsp salted butter
  • 1 cup chicken stock
  • 1/2 medium yellow onion (sliced thinly & cut to 1­-in pieces)
  • 2 1/2 cups fresh or frozen blackberries
  • 1/4 cup honey
  • 2 Tbsp fennel seed


  1. Preheat oven to 350°F with rack in middle position
  2. Put fennel seed in cast iron skillet and spread
  3. Roast fennel seed in oven for 6 minutes
  4. Grind fennel seed up in spice grinder and stir in sea salt
  5. Turn oven temp to 375°F
  6. Melt the butter in a medium saucepan at medium heat
  7. Add chopped onions and allow to cook, stirring occasionally
  8. Allow butter and onions to cook around 5 minutes
  9. Slowly stir mustard into mixture
  10. Add in the chicken stock slowly and stir for several (7 to 10) minutes
  11. Add honey and blackberries
  12. Lower the heat to medium-low so sauce can thicken
  13. Allow sauce to thicken for around 10 minutes
  14. Strain half of the sauce and keep the juices
  15. Add juices strained out back into the original pan
  16. Discard onions and berries in the strainer
  17. Remove pork tenderloin from packaging and rub with 1 Tbsp fennel salt already prepared
  18. Take a 12in (or 10in) cast iron skillet and place on medium-high heat
  19. Add olive oil to pan and leave to heat for 1 min
  20. Place tenderloin in skillet and brown on all sides (5-6 min total)
  21. Move skillet to the oven and roast the tenderloin for 20 mins uncovered
  22. Take skillet out of the oven and let sit for 5-7 mins
  23. Pour juice from pan into blackberry sauce
  24. Heat the sauce for a few mins
  25. Slice cooked tenderloin and spoon sauce over cut pieces

When preparing any pork dish, making sure your meat is fully cooked is always the most important task. Be sure that your pork tenderloin has finished cooking by inserting a quick-read meat thermometer into the thickest part of the loin. If the temperature reads 145°F, your tenderloin is done.
