Good New Orleans Creole Gumbo
|1 cup all-purpose flour (purpose)34 cup bacon drippings1 cup chopped celery (coarsely)
1 onions (coarsely chopped)
1 green bell pepper (coarsely chopped)
2 cloves garlic cloves (minced)
1 lb andouille sausage (sliced)
3 qts water
6 cubes beef bouillon
1 tbsp white sugar
2 tbsps hot pepper sauce (tabasco or to taste)
1/2 tsp Cajun seasoning or to taste ( I use more)
|4 bay leave12 tsp thyme leaves (dried)14 12 ozs stewed tomatoes
6 ozs canned tomatoes (sauce)
2 tsps file powder (gumbo)
2 tbsps bacon drippings
20 ozs okra (frozen cut, thawed)
2 tbsps distilled white vinegar
1 lb crabmeat (lump)
3 lbs shrimp (uncooked medium, peeled and deveined)
2 tbsps worcestershire sauce
