Dutch Oven Chicken & Dumplings

Dutch Oven Chicken & Dumplings

2 cups flour
1 tbsp baking powder
¾ tsp salt
½ tsp baking soda
¾ cup whole milk
¼ cup buttermilk
1 tbsp unsalted butter
3 lbs chicken pieces
1 tbsp Vegetable oil
2 tbsp unsalted butter
3 cups chicken broth
4 carrots
3 celery ribs
1 medium onion
1 ½ cups peas
¾ cup cream
1 lb russet potatoes
2 bay leaves
Salt and pepper
¼ cup chopped parsley
imagesPat chicken dry with paper towels and season with salt and pepper. Pour ½ of the olive oil into a Dutch oven and place the oven onto heat. Add half of the chicken and cook until golden brown on both sides. Remove chicken to a plate and repeat with the balance of the chicken. Remove skin from the chicken. Dice the onion and cut the carrots and celery into ¼” pieces. Melt the butter in the Dutch oven heated to 325 degrees. Add in the carrots, celery and onion seasoned with ½ tsp of salt and cook about 10 minutes until onions are translucent. Peal the potatoes and cut into 1” pieces. Whisk broth, cream and potatoes into the Dutch oven and add in the bay leaves. Cover the oven and cook until chicken is fully cooked. Note: Breasts take about 20 minutes while thighs and drumsticks take about 60 minutes. Add in breasts after other pieces have cooked for 40 minutes. Remove chicken pieces from the Dutch oven and allow chicken to cool.

While the chicken is cooling, prepare the dumpling mixture by whisking together the flour, baking powder, baking soda and salt in a bowl. Stir in the milk and buttermilk until the liquid has been incorporated and the mixture is smooth.

Remove the bones from the chicken, shred the meat and return it to the oven. Mix in the peas and parsley. Use a large spoon and drop eight ½ cup portions of the dumpling mixture onto the top of the filling. Brush the dumplings with melted butter. Cover the Dutch oven and bake at 325 degrees for 20 to 30 minutes. Allow the bake to set and cool for 10 minutes before serving.

Use 24 charcoal briquettes for the outdoor cooking of this recipe with charcoal as your fuel. Place 15 lit briquettes on top and 9 underneath your Dutch oven. Replace your coals about every 30-40 minutes. You may need more coals in windy or cold weather.

Chocolate Chip Dutch Baby Recipe

A Dutch baby is a puffy, baked pancake.

dutch-baby-ck-577204-xA preheated cast-iron skillet enables the batter to start cooking immediately and causes it to puff. Cook the bananas while the Dutch baby is in the oven, so they’ll be done at the same time.

3/4 cup 2% reduced-fat milk
1/2 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
2 large eggs
2 tablespoons butter, divided
1/3 cup semisweet chocolate chips
3 large firm bananas, halved lengthwise
1/2 cup coffee-flavored liqueur (Kahlúa)
1/2 cup frozen reduced-calorie whipped topping, thawed

Preheat oven to 450°.

Place a 9-inch cast-iron skillet in a 450° oven for 15 minutes. Combine first 5 ingredients, stirring with a whisk until smooth. Melt 1 tablespoon butter in preheated pan until browned, swirling to evenly coat pan. Add batter; sprinkle evenly with chocolate chips. Bake at 450° for 10 minutes or until puffed and browned.

Cut banana halves in half crosswise. Melt 1 tablespoon butter in a large skillet over medium-high heat. Add bananas; cook 2 minutes on each side or until browned. Add liqueur; simmer 1 minute. Serve with Dutch baby; top with whipped images (4)topping.

The Travelling Skillets Journey

The Travelling Skillets Journey

Iron Cookers travelling skillet has started journey at Cecil Nye’s In Michigan, where it has made a cherry pie.

A home made crust that consist of one cup flour
1/3 cup vegetable shortening & 2 tablespoons of water.
Mix, form into a ball and sit in refrigerator for at least an hour before you try to roll out.

One can of pie filling fits nicely into this size skillet and that is what I used for this pie.For the top crust mix a double batch of pie crust & 1/3 cup of cooking oil.

You will want it more flexible to be able to weave the crust.

Now it will be packaged and sent on its way to Kentucky
