Brazilian Pot Roast In a Cast Iron Dutch Oven

What is a Brazilian pot roast you might ask. Winter is giving us a break this year, but don’t be fooled. We all have made that mistake before, and have been sorry that we were not prepared.
We will be working in shirts with short sleeves one day and there is 3 inches of snow on the ground the next. But that is not keeping  my Dutch oven and tripod in the garage and I am sure you feel the same way.  Give this recipe a try, outside or in it is a great way to cook a beef roast.

Preheat oven to 325 F

1 beef roast  – 3 or 4 pounds
1 clove garlic minced
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon cumin
1/2 cup cider vinegar
1/2 cup water
2 tablespoons oil
1 onion
1 carrot
1 bay leaf

Brazilian pot roast With wide pronged fork, poke holes in roast over all surface

Combine garlic, salt, vinegar & water.
Pour over meat making sure marinade seeps into the hoels in meat. let stand for an hour.

Brown all surfaces of roast in oil in a cast iron Dutch oven over medium heat

Preheat oven to 325 F

add liquid and cook for 30 minutes.
Take out and add carrot,onion & bay leaf to the Dutch oven and turn down heat and simmer for 2
or 3 hours,  Until meat is tenderbraised-pot-roast
