Dutch Oven Pumpkin Banana Bread

When I have friends over to my house I always like to have something in the oven to smell up the place and to give those individuals the chance to enjoy something warm and homemade during their visit. This Dutch Oven Pumpkin Banana Bread is one of my go-to recipes – it is full of flavor, soft and moist, and it feeds six to eight people!

Ingredients

  • 1 cup ripe banana, mashed
  • 2 cups canned pumpkin
  • 1/2 cup raisins
  • 3 cups flour
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs, beaten
  • 1 tsp. vanilla
  • 1 tsp. lemon juice
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1 tsp. allspice

Directions

  1. Start by mixing the sugar and oil in a large mixing bowl. Stir in the eggs, banana, pumpkin, lemon juice, and vanilla. Add dry ingredients and mix well.
  2. Line Dutch oven with aluminum foil and pour mixture inside.
  3. Cover, and bake at 350 degrees for one hour.
  4. For gluten free version substitute flour with all purpose gluten free flour and add 1 1/2 tsp. Xanthan gum.

Note: When cooking outdoors you will need to place 10 lit charcoal briquettes beneath the oven and 15 on top of the oven. Refresh the coals after 30 minutes. On cold or windy days you may need to use more briquettes.

When it comes to the banana that you use in the recipe you want it to be free of green on its peel but you don’t want the banana to be completely black.
